Swift Ground Bison Recipes, Corn Salad

Sometimes the week can feel like it ran away from you, and the last thing on your mind is dinner. Looking for meals that take about 30 minutes to prepare and to put in rotation for days when you need something nutritionally dense, swift, and also of value?
We've put together 3 different recipes that use 1lb ground of bison meat sautéed and added to one of these 3 recipes to enjoy. These recipes are healthy, high protein, and an economical meal. See the first recipe below:
Ground Bison Corn Salad With Tomatoes, Feta and Veggies
Ingredients
- 1 lb FMR ground bison
- 1 clove garlic, minced
- 2 to 3 cups raw or cooked corn kernels (4-6 ears, or a bag or frozen corn)
- 1 large or 2 medium ripe tomatoes or ½ cup favorite red salsa already prepared
- 3 tablespoons extra- virgin olive oil or avocado oil
- 4 ozs Feta
- Salt and freshly ground pepper to taste
Directions
- Over medium heat, saute ground bison in oil and garlic about 5 minutes in large iron skillet
- Add corn kernels over medium heat for 3 minutes
- Lastly combine tomatoes or salsa to browned bison and corn
- Remove from heat, let rest then add feta crumbs
- Serve with bread or in a bowl for a low carbohydrate option
