Chuck Steak Carne Asada

Last harvest, instead of chuck roasts, we chose 1” cut chuck steaks. Recognizing folks don’t need 3lbs of bison during the busy work week, we chose to have 1’ chuck steaks packaged for simple carne asada.  We tried and failed to prepare the chuck steaks like a traditional steak,  defrosting, bathed in acid or pH 4, grilled at high temp for less than a few minutes, failed. Nope. TOUGH. Like Lana del Ray says, “tough like scuff on an old pair of leather boots”. No one argues about the nutritional value but let's talk about how to prepare  the NOT  tough chuck steaks. Friends lament,  we don’t  want to prepare a 3lbs piece of bison meat and F*ck it up.  


Solution:

This nutritious 1” cut is NOT tough, when simply prepared the low and slow way. Best not tough carne asada fast food. Serve with guacamole, organic blue corn tortillas and a fresh veggie and rice 


Ingredients:

  • 1 package bison chuck steaks defrosted
  • 1 tbs  paprika
  • 2 cloves fresh garlic
  • 1 tbs tajin
  • 1 tbs red pepper
  • 1 can Hatch enchilada sauce

Directions:

  1. Defrost
  2. Pan sear bison chuck steaks each side ~45 seconds with aforementioned spices
  3. Bake 150-175 degrees on oven’s lowest temp for 1.5 hours
  4. Enjoy chuck steak baked carene  asda. NOT TOUGH.
